What's the concept behind IP reputation?

Each IP address has a reputation score that changes over time.

When you send an email message, this leaves your outbound mailserver and is handled by the recipient mailserver. During this process, these mailservers are using IP reputation based decisions on how to handle your email. IP Reputation in terms of deliverability is your online sending history and is used to tell if a certain IP Address is responsible for sending Bounce, Spam or Unwanted Bulk Email (UBE). The ISPs and the anti-spam filters use this score to decide if an incoming email should be accepted or rejected.
